We were delighted to take a tour of three Italian Dairy farms and speak with the owners of farms in the Crema, Po river valley area of Italy. In looking at these farms, all family run, we talk with Mauro Bianchessi, Spring Dairy, who manages not only a diary but also a biogas digestor that generates alternative income streams. In visiting with Luca and Patricia Panizza, the husband/wife team on a robot and parlor milking system in Robecco d’Oglio we learn the special considerations necessary for producers of milk destined for Grana Padano cheese. Finally we meet the brother team of Roberto and Sergio Ancelotti, noted producers of milk for Parmigiano-Reggiano cheese. With the higher milk price there are potentially restrictive regulations. They speak of their plans to produce and remain successful in that system.
